Cooking for lots of people 3 (cooking with a vengeance)

“Never again”, I said after the enjoyable but exhausting experience of catering a wedding earlier this summer. I half believed it, and certainly assumed that it could legitimately be appended with “at least, not this summer”…

…And lo, it came to pass that barely two months later I found myself catering at a wedding for around a hundred people in a forest in New Hampshire. In truth, it was the day before the wedding, and I was very much a sous chef in the service of Bill and John, friends of the happy couple – so I was free of the stress of planning and coordinating and making decisions more complicated than “that needs longer / that looks perfectly done / oops”.

Huge thanks to Liz and Pete for inviting me to this amazing wedding. It was a pleasure to help with grilling and with lantern hanging and with celebrating. Congratulations and love to you both. Huge thanks to Bill, John and Tom the other sous chef for putting up with my inexpert and slow grilling. And huge thanks to the two guys whose names I’ve forgotten that took over when the veg gave way to the sausages and my usefulness was very much at an end.
